Exactly. Apophis, the physical form of Isfet, was defeated. It doesn't mean that Isfet itself is gone. Apophis is simply an embodiment that Isfet had created for itself. If the physical form is gone, it doesn't necessarily have to mean that the being itself is. So, Ruby's statement holds true and so does the canonical fact that Apophis is Isfet incarnate.
I can see why Chaos is winning this.
Not everyone has read the Kane chronicles, and we have not been introduced to Chaos yet, so he seems completely undefeatable, although Apophis is pretty undefeatable too.
If you have read The Metamorphoses by the Roman poet Ovid, you will know that he describes Chaos as "inert weight". I hardly see how an "inert weight" could kill Apophis. You see, Chaos is an extremely passive being (if even a being at all, for he is essentially the personification of the Abyss), and there is not a single instance of him taking an active role in any of the mortal affairs, so I doubt that he could win.
Then again, how can a serpent, no matter how powerful, destroy an "inert weight"? By my reckoning, Chaos is not so much a god as he is a place: all the shadows and darkness beyond the stars. How could one destroy all that?

Everyone poet/author has a different interpretation of a myth. The Chaos that we're discussing Iis an interpretation made by Uncle Rick, and bringing in the views of other poets basically becomes untrue and uncanon. Let Chaos be described as whatsoever, but we should only consider Uncle Rick's explanation of the protegenos, since we're discussing his Riordanverse. Also, in the Riordanverse, anything that falls into Chaos dies. Chaos is the only thing that can actually kill an immortal. So, your interpretation of Chaos as air or a passive being is not really accurate, especially since the air here can actually hurt someone. Nevertheless, I still think we won't really have a winner, because I don't know if Chaos, a Greek protegenos, a Greek emptiness, a Greek void, can harm an Egyptian personification of Isfet. Are all primordial voids literally one being interpreted as different beings for different mythologies? Or are they all actually different omnipotent beings? We don't have answers for this and thus, I think deciding a winner is solely based on speculation and not concrete evidence (from the Riordanverse).
