I don't think she could control weapons that aren't made of precious metals, so she wouldn't be able to control mortal bullets. As for demigod weapons, we have seen that she can control Imperial gold (Jason's sword, The House of Hades) so it's possible that she could use it defensively. However, I don't think her metal abilities are strong or fast enough to deflect swords or arrows.
